Homemade Mince Pies - Blogmas Day 8

I love mince pies at Christmas but nothing beats homemade ones so for blogmas day 8 I thought I'd share with you how I make them!

Shortcrust pastry
Plain flour
Egg for egg wash
Cinnamon or sugar for topping (optional)

Cupcake tin lined with greaseproof paper
Star cookie cutter
Round cookie cutter or a glass, needs to be about 10cm wide
Rolling pin

First thing we did was preheat the over to 200°C, dusted the table top and rolling pin with plain flour and took the pastry out of the packet.

We then rolled out the pastry so it was about 1/2cm thick and started cutting the rounds, we used a glass as we don't have round cookie cutters!

I put the rounds in the cupcake tins so they came up above the top of the tin and made a bowl shape and filled them with mincemeat, how much you put in is literally personal preference it all depends of how full you want them!

While I filled them my housemates cut the stars for the top, these need to be about half the size of the rounds so they just sit over the top of the mincemeat.

The stars were then placed on the top and we egg washed the pastry. I then added cinnamon to half and sugar to the rest.

We then put them in the oven for about 17 minutes until they were golden brown!

They aren't burnt I promise, its the cinnamon, apparently its impossible to sprinkle, haha! They were lovely though, a big hit with everyone in the house!

Let me know if you try this recipe out, its so easy! Only 17 sleeps to go!
